Why I love this simple recipe

These air fryer mixed vegetables are:

Easy

Crispy

Dairy-Free

Savory

Gluten-Free

Vegan

Healthy

Oil-Free except a little cooking spray!

Ingredients

  • Mixed Frozen Vegetables: Any variety of frozen vegetable mix will work with this recipe. For example, California style (cauliflower, broccoli, carrots) or a classic medley (like corn, green beans, peas, and carrots). Cook times vary and are specified in recipe card.
  • Cooking Spray: The spray helps the vegetables not stick to the air fryer. You can also use a little spray on the vegetables themselves to make them a little crispier (totally optional, you do you!).
  • Garlic and Onion Powders: These classic spices bring the flavor!
  • Sea Salt: Just a bit of salt goes a long way. Start with just 1/4 teaspoon, you can always add more to your liking.
  • Black Pepper: To taste (I love a lot!).

Substitutions and Additions

  • Vegetables: You can substitute just 1 frozen vegetable instead of a medley.
  • Cooking Spray: You can use oil instead of spray, like olive oil, avocado oil, grapeseed oil, or canola oil. Toss vegetables in 1 tablespoon oil before adding to air fryer.
  • Garlic and Onion Powders: Feel free to use just one of these spices and/or your choice of dried herbs (1/2 teaspoon of each).
  • Sea Salt: Kosher salt works as well.
  • Black Pepper: Feel free to substitute with cayenne or red pepper flakes or use both.

How to Cook Frozen Vegetables in Air Fryer

  • You do not need to preheat the air fryer for this recipe.
  • Optional: line air fryer basket with parchment paper. Not necessary, but will help veggies not fall through basket to bottom of fryer.
  • Spray air fryer with cooking spray to avoid sticking.
  • Pour frozen veggies into air fryer.
  • Add seasonings. Shake basket to even out seasonings.
  • Optional: Lightly spray vegetables with cooking oil spray (this will help them get more crispy).

Instructions for Classic Medley Veggie Mix (WITHOUT Cruciferous Veggies)

  • A mix without cruciferous vegetables may include peas, corn, carrots, green beans, and/or snap peas.
  • Set air fryer to 400℉ for 10 minutes.
  • Check veggies at half way point (at 5 minutes left). Shake basket to even cooking. Place basket back in air fryer to finish cooking.
  • When air fryer stops at 10 minutes, check your veggies. Add 1 more minute as desired. Be careful not to overcook green beans especially, as the texture can become tough.

Instructions for Cruciferous Vegetable Mix

  • A mix with cruciferous vegetables will include broccoli and/or cauliflower, in addition to other veggies like carrots, corn, and peas.
  • Set air fryer to 400℉ for 16 minutes.
  • Check veggies after 10 minutes of cooking (at 6 minutes left). Shake basket to even cooking. If you see really crispy (done) pieces, take them out. Replace basket back in air fryer to finish cooking.
  • When air fryer stops at 16 minutes, check your veggies. Add 1-2 more minute as desired (air fryer brands vary slightly).

Expert Tips

  • Be sure to check the veggies at the halfway point. Open the air fryer and remove the basket. Shake the basket to move the vegetables around and help the vegetables evenly cook.
  • Some vegetables tend to cook faster that others, even if they are in the same mix. For example, broccoli cooks faster than cauliflower because the tips of the florets are smaller. You may need to remove some of the faster cooking veggies to allow slower cooking veggies more time.

FAQs

How do you make frozen vegetables crispy in the air fryer?

Frozen veggies go straight into the air fryer from frozen. Spray the basket with cooking spray first to avoid sticking. You can add spices and salt for flavor. Veggies do not need oil, but you can add oil or cooking spray to make them crispier.

How long do you cook frozen vegetables?

It depends on the type of vegetable. For standard vegetable mix (carrots, peas, green beans, corn), start with 10 minutes, checking at the halfway point. For cruciferous vegetables, start with 16 minutes.

Should I preheat the air fryer first?

You do not need to preheat the air fryer for this frozen vegetable recipe. The vegetables will cook well, and the cruciferous ones will even get crispy, without preheating.
