Oven Roasted Cauliflower with Garlic, Capers & Panko
Looking for an impressive veggie side dish that is easy to prepare? Bored of the same old cauliflower? This Oven Roasted Cauliflower with Garlic, Capers & Panko has all the feels and tastes: garlicky, savory, and crunchy with a touch of heat and acid.
Inspiration for this Recipe
The most delicious and memorable cauliflower dish I have ever had inspired this easy and tasty cauliflower recipe. About a month into becoming a new mom, our friends brought us a scrumptious takeout meal from one of our favorite spots, Pizzeria Delfina in San Francisco. But surprisingly, it wasn’t the pizza that made the memory…it was their amazingly crunchy, spicy cauliflower.
Fast forward a few years…to cooking for my kiddos and wanting to expand their palates beyond simple dishes. Once I discovered that my kids love simple roasted cauliflower with olive oil and salt, I began trying to recreate that Delfina cauliflower on a milder scale. After a few tries, this simple roasted cauliflower recipe was born.
Ingredients
- large cauliflower head
- garlic, roughly chopped (any smaller and it will burn)
- capers
- olive oil
- sea salt
- black pepper to taste
- red pepper flakes to taste
- panko breadcrumbs
- lemon
- chopped green onions or chives for garnish (optional)
How to Make this Roasted Cauliflower
- Set oven to 425 degrees.
- Mix cauliflower, garlic, capers, olive oil, salt, pepper, and red pepper in mixing bowl.
- Roast on non-stick baking sheet, silicon mat lined baking sheet, or parchment-lined baking sheet for about 20 minutes, moving/flipping at least once to prevent burn, until cauliflower begins to soften.
- Add panko breadcrumbs and gently mix in with tongs so that oil combines with panko.
- Bake until cauliflower is golden brown and panko breadcrumbs are crisp, about 15 minutes more (see below photo).
- Take out of oven, gently mix again, and squeeze 1/2 lemon evenly over sheet. Taste. Adjust. Garnish with green onion or chives. Serve.

- 1 large cauliflower head, cut into bite-size pieces about 9 heaping cups
- 3 tbsp roughly chopped garlic Do not chop too finely or it may burn

- 1/2 large lemon, squeezed or about 4 tsp
- chopped green onions or chives for garnish optional
